Mayonnaise (majɔˈnɛːzə; -ˈneːzə; -ˈnɛːs (österr.)), auch als Mayo bzw. Majo bezeichnet, ist eine dickflüssige, kalt hergestellte Sauce auf der Basis von Eigelb und Öl. Sie ist eine der fünf Grundsaucen der klassischen Küche, aber die einzige kalte Grundsauce; sie dient als Basis für zahlreiche Ableitungen zu anderen Soßenvarianten. Die Grundlage liefert eine Emulsion von Öl und Zitronensaft oder Essig, wobei das Lecithin aus dem Eigelb als Emulgator dient.
Verbreitet ist die Auffassung, dass die Mayonnaise ihren Ursprung auf den Balearen hat und ihr Name sich von der menorquinischen Hafenstadt Mahón ableitet. Am 28. Juni 1756 kapitulierte dort die britische Besatzung der Festung San Felipe vor angreifenden französischen Truppen unter der Führung des Herzogs von Richelieu. Zur Feier des französischen Sieges sei eine kaltgerührte Sauce kreiert worden, die damals in der französischen Küche noch gänzlich unbekannt war. Richelieu habe das Rezept in Frankreich eingeführt, und von dort sei die Mayonnaise weltweit verbreitet worden. Eine Variante der Theorie besagt, dass Mahonnese während der Belagerung aus der Not heraus zubereitet wurde.
Das Etymologische Wörterbuch der deutschen Sprache vermutet eine sprachliche Ableitung aus dem französischen Verb mailler – zu Deutsch: schlagen –, da die Mayonnaise geschlagen wird. Es bezweifelt die Ableitung von Mahon.
Einer anderen Theorie zufolge ist die Mayonnaise aus der katalanischen Aioli hervorgegangen, die mithilfe von Mörsern hergestellt wird. Nach ihrem Grundrezept wird fein zerstoßener Knoblauch mit Öl zu einer Emulsion aufgeschlagen und anschließend mit Salz abgeschmeckt. Aioli wurde bereits im Jahr 1024 erstmals schriftlich erwähnt.
Auf Grund ihres hohen Fettanteils hat Mayonnaise einen im Vergleich zu anderen Soßen sehr hohen Energiegehalt von ca. 2847 kJ (680 kcal). In 100 Gramm Mayonnaise sind 74,9 g Fett enthalten, 1 g Eiweiß und 0,6 g Kohlenhydrate. Dabei sind rund 60 % des Fettanteils mehrfach ungesättigte Fettsäuren. Mayonnaise enthält größere Mengen an Vitamin K sowie, in geringerem Maß, auch Vitamin D und E.
